Pin ItOvernight Oats with All the Flavors of Apple Pie
I love making classic Overnight Oats for an easy breakfast, but during the fall months, I like to mix things up with my Pumpkin Overnight Oats or these Apple Pie Overnight Oats.
They have all of the flavors I love in a classic apple pie, from the cinnamon and maple syrup to the tender apples on top, but in an easy breakfast you can make ahead.
The overnight oats are creamy, lightly sweetened, and full of apple and cinnamon flavor. I use a little unsweetened applesauce for extra apple flavor, along with Greek yogurt for creaminess and a boost of protein. Chia seeds help thicken the oats as they chill, adding fiber to this protein- and fiber-packed breakfast!
But my favorite part might be the cinnamon apples. They cook in just a few minutes with butter, maple syrup, and cinnamon until they are tender and lightly caramelized. Spoon them over the oats, add a handful of chopped pecans or a drizzle of nut butter, and you have a breakfast that feels a little special without requiring much effort.
These apple pie overnight oats are perfect for busy weekday mornings, meal prep, or a fall breakfast when you want something that tastes like a treat. You can make individual jars for an easy grab-and-go option or enjoy them at home with your favorite toppings. Make a batch tonight, and breakfast will be waiting for you tomorrow!

Ingredients (with Helpful Notes)
- Old-fashioned oats: Rolled oats give overnight oats their best texture, don't use quick oats. Use certified gluten-free oats if needed.
- Milk: I use unsweetened vanilla almond milk, but dairy milk, oat milk, or another milk you enjoy will work.
- Plain Greek yogurt: Makes the oats creamy and adds protein. Use your favorite dairy-free yogurt for a vegan option.
- Unsweetened applesauce: Adds moisture and extra apple flavor without making the oats overly sweet.
- Pure maple syrup: Naturally sweetens the oats and the apple topping. Adjust the sweetness to your taste.
- Chia seeds: Help thicken the oat mixture as it chills and give the oats a more satisfying texture.
- Pure vanilla extract: Adds warmth and rounds out the apple pie flavor.
- Ground cinnamon: Brings that familiar apple pie flavor to both the oats and the topping.
- Sea salt: A small pinch balances the sweetness and brings out the other flavors.
- Salted butter: Helps the apples soften and caramelize in the skillet. Use a plant-based butter for a dairy-free version.
- Honeycrisp apple: I love Honeycrisp apples for their crisp texture and sweet-tart flavor. Fuji or Pink Lady apples are also great choices.
- Optional toppings: You don't have to add toppings, but here are a few ideas! Chopped pecans, walnuts, pepitas, dried cranberries, raisins, or a drizzle of peanut butter or almond butter add extra flavor and texture.
How to Make Apple Pie Overnight Oats
Mix the oats. Add the oats, milk, Greek yogurt, applesauce, maple syrup, chia seeds, vanilla, cinnamon, and salt to a bowl or jar. Stir everything together until well combined.
Cook the cinnamon apples. Melt the butter in a skillet and stir in the chopped apple, maple syrup, and cinnamon. Cook until the apples are tender and lightly caramelized. Let them cool slightly before adding them to the oats.
Assemble and refrigerate. Divide the oat mixture between two jars or bowls, then spoon the cinnamon apples over the top. Cover and refrigerate overnight, or for at least 4 hours, so the oats soften and thicken.
Add your favorite toppings. When you're ready to eat, take the oats out of the refrigerator and finish with chopped pecans, walnuts, pepitas, or a drizzle of peanut butter or almond butter. Enjoy them cold, straight from the fridge!
Tips for Making Apple Pie Overnight Oats
- Give the oats enough time to chill. Overnight is ideal, but at least four hours in the refrigerator will work. This gives the oats and chia seeds time to absorb the liquid.
- Use old-fashioned rolled oats. They soften nicely while keeping some texture. Quick oats can become mushy, and steel-cut oats need a different preparation method.
- Cut the apples into small, even pieces. They will cook more evenly and be easier to spoon over the oats.
- Don't rush the apples. Give them a few minutes in the skillet to soften and develop a little caramelization. This is what makes the topping taste like warm apple pie filling.
- Let the apples cool slightly. After cooking the cinnamon apples, let them cool a bit before spooning them over the oats and refrigerating.
- Adjust the consistency before serving. Overnight oats thicken as they sit. If yours are thicker than you like, stir in a splash of milk.
- Make them your own. Add extra cinnamon, a handful of chopped pecans, dried fruit, or a drizzle of almond butter or peanut butter.
- Choose your serving temperature. These oats are delicious straight from the refrigerator, but you can also warm the oat mixture gently if you prefer a warm breakfast. Add the cooked apples afterward.
How to Store
- Store the overnight oats in an airtight container or individual jars in the refrigerator for up to 4 days. For the best texture, keep the cooked apple topping in a separate container and spoon it over the oats when you are ready to eat.
- You can prepare the oats and cook the apples ahead of time, making this an excellent breakfast for meal prep. If the oats thicken too much during storage, stir in a little milk before serving.
- I don't recommend freezing the assembled overnight oats, since the texture of the yogurt and oats can change after thawing.
