A Fresh Way to Use Summer Zucchini

Every summer I find myself with a counter full of zucchini, and while I love baking my famous chocolate zucchini bread with it, I'm always looking for new ways to turn it into dinner. This creamy zucchini pasta has become one of my favorite recipes because it transforms a few simple ingredients into something that tastes surprisingly luxurious.

Instead of leaving the zucchini in chunks, it's cooked until soft and lightly caramelized, then blended with ricotta into a silky smooth sauce. It coats every piece of pasta beautifully, and with plenty of Parmesan, fresh basil, and a squeeze of lemon, the flavors are bright, fresh, and perfect for summer.

I also love that this recipe comes together in about 30 minutes, making it ideal for busy weeknights. It's a great way to use garden zucchini, and even picky eaters usually have no idea just how many vegetables are tucked into the sauce. My boys LOVE this pasta and always ask for seconds!

Ingredients (with Helpful Notes)

  • Pasta: Use your favorite shape. Short pasta like rigatoni, fusilli, penne, or orecchiette all do a great job catching the creamy sauce, but spaghetti or fettuccini noodles are fun too. Use gluten-free pasta if you need the recipe to be gluten-free.
  • Kosher salt: Generously salt the pasta water for the best flavor.
  • Reserved pasta water: Don't forget to save it before draining. It's the key to creating a silky, glossy sauce.
  • Olive oil: Use a good-quality extra virgin olive oil for the best flavor.
  • Zucchini: Medium zucchini are ideal. No need to peel them, the skin adds color and nutrients.
  • Shallot: Adds a mild sweetness that complements the zucchini.
  • Garlic: Fresh garlic gives the sauce plenty of flavor.
  • Ricotta cheese (or cottage cheese): Ricotta creates a rich, creamy sauce. If you don't have ricotta, cottage cheese is a good swap!
  • Parmesan cheese: Freshly grated Parmesan melts smoothly into the pasta and adds savory flavor.
  • Fresh basil: Brightens the pasta with fresh summer flavor.
  • Fresh lemon juice: A little acidity balances the richness of the cheese and brings the sauce to life.
  • Crushed red pepper flakes: Optional, but great if you like a little heat.

Tips for Making Creamy Zucchini Pasta

Don't rush the zucchini. Cook it until it's very soft and lightly caramelized. This concentrates the flavor, cooks off excess moisture, and creates the creamiest sauce.

Blend while the zucchini is warm. It will puree more easily and create a silky smooth sauce. I add a little of the reserved pasta water to help it blend too.

Salt your pasta water generously. This is your only chance to season the pasta itself, and it makes a big difference in the finished dish.

Always reserve the pasta water before draining. The starchy water helps the sauce cling to the pasta and creates a glossy, restaurant-quality finish.

Add the pasta water gradually. Reserve ¾ cup of the starchy pasta water, but you may not use it all. Start with ¼ cup, then add more a tablespoon or two at a time until the sauce reaches your desired consistency.

Use freshly grated Parmesan cheese. It melts smoothly into the sauce and has much better flavor than pre-shredded cheese.

Finish with fresh basil and lemon juice. Stir them in at the very end to keep the flavors bright and fresh.

Serve right away. This pasta is at its creamiest when it's freshly made. If it sits for a few minutes, simply stir in a splash of reserved pasta water to loosen the sauce before serving.

How to Store the Pasta

  • Store leftover zucchini pasta in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently on the stovetop or in the microwave with a splash of water to loosen the sauce. The pasta will continue to absorb the sauce as it sits, so adding a little liquid helps restore its creamy texture.
  • I don't recommend freezing this pasta because the ricotta-based sauce can separate once thawed.

Zucchini Pasta

Ingredients
  

For the pasta:

  • 1 lb pasta
  • Kosher salt, for salting the water
  • 3/4 cup reserved pasta water

For the zucchini sauce:

  • 2 tablespoons olive oil
  • 4 medium zucchinis, chopped (about 5 cups)
  • 1 shallot, minced
  • Kosher salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1/2 cup ricotta cheese, or cottage cheese
  • 2 tablespoons of the reserved pasta water

For finishing the pasta:

  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup chopped basil
  • 1 tablespoon fresh lemon juice
  • Crushed red pepper flakes, optional

Instructions
 

  • Cook the Pasta. Bring a large pot of generously salted water to a boil. Cook the pasta according to package directions until al dente. Before draining, reserve ¾ cup of the pasta cooking water. Drain the pasta and set aside.
  • Cook the Zucchini. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the zucchini and shallot. Season with salt and black pepper and cook, stirring occasionally, for 10 to 12 minutes, or until the zucchini is very soft and slightly caramelized. Stir in the garlic and cook for 1 minute.
  • Make the Zucchini Sauce. Transfer the zucchini mixture to a blender or food processor. Add the ricotta (or cottage cheese) and 2 tablespoons of the reserved pasta water to help it blend. Blend until smooth and creamy.
  • Combine the Pasta. Add the pasta back to the pot and pour the zucchini sauce over the pasta. Toss until well coated. Add ¼ cup of the reserved pasta water to loosen the sauce and help it coat the pasta. Add more of the reserved pasta water, a tablespoon or two at a time, until the sauce reaches your desired consistency. You might not need it all.
  • Finish the Pasta. Stir in the Parmesan cheese, basil, lemon juice, and crushed red pepper flakes, if using. Season with additional salt and black pepper, to taste.
  • Serve. Serve immediately with extra Parmesan cheese and fresh basil, if desired.

  • Reserve the pasta water before draining the pasta.
  • Cook the zucchini until it's very soft for the smoothest, most flavorful sauce.
  • Blend the sauce while it's warm for the creamiest texture.
